Fresh pineapple goes into a caramelizing pan in chef Alicia Olton’s 2021 Coral Reef Club demonstration for Barbados Tourism Europe. She flambés the slices, then plates dessert with rum-raisin ice cream and a pineapple chip. One to watch for the technique.
